Avocado Pudding. I cannot stop eating this concoction. Let's call it the recipe of the week!
I have been having this pretty much daily for lunch.
I don't watch the Kardashians - I did when I was in my early twenties, but now that all of them have gotten married, have kids, and now that I have a kid and graduate school - I much prefer to read and watch other television shows that interest me. With that being said - I was making avocado pudding with cocoa powder for a while, whenever I craved something sweet (also super easy), but I was seeing this Kourtney Kardashian avocado pudding all over Pinterest - and because of my love for Avocado - I decided to try it.
In my diet, I don't really use any sugar. The original recipe does contain cane sugar or coconut sugar (please don't take my absolute word for which kind of sugar is exactly used). You can feel free to add coconut sugar or raw honey if you wish. It will make it sweeter. But the vanilla bean and toppings create a sweetness in it of itself, so I don't think it's needed.
This pudding is the easiest to make, completely raw, and satisfying.
You will need:
A blender
Half a ripe avocado
Vanilla Extract or Vanilla Bean
Almond Milk (or which ever milk you prefer)
*Chia seeds are optional.
There. Three ingredients.
I use different toppings, depending on what I'm craving.
